Charcoal Milker

A stout is a beer brewed from a must characterized by its highly roasted grain content. The presence of these well-toasted beans in the recipe confers the dark colour of the beer and a taste of coffee, whose intensity and bitterness are mitigated by the addition of lactose. Then the stout is denser and softer, the foam richer and creamier.

The grandfather of our brewer, Joseph R. Morasse spent his life producing coal. In these snow protected furnaces, hardwood residues were heated. Almost 125 farmers in Saint-Raymond produced coal: the economic contribution of coal mining was such that during the two major wars, their owners were not subject to conscription. Production resulting from their activities was considered part of the war effort. For the sake of history: The name of the beer comes from the wordplay Charcoal-Milker (charbonnier).
